I don't know about Texas ones, but I can tell you some about
the ones here in Oil City, PA, where Oil was discovered long
ago.

What it comes down to is you place "sucker rods" down the
hole that operate a foot valve that pushes the water up a bit
a time, till it 'spills' out of the casing at the top.
